Ingrédients

  • 1 can (400g) chickpeas, drained and rinsed

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • 1/2 red onion, finely chopped

  • 1/2 cup feta cheese, crumbled

  • 1/4 cup Kalamata olives, sliced

  • 2 tbsp fresh parsley, chopped

  • 1–2 tbsp fresh mint (optional but recommended)

Instructions

  • Add chickpeas, tomatoes, cucumber, red onion, olives, and herbs into a large bowl.
  • In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  • Pour the dressing over the salad and toss well.
  • Gently fold in the feta so it doesn’t break too much.
  • Leave it for 10–15 minutes before serving so flavors blend.

  • If you have time, marinate the onion in lemon juice for 5 min → removes harshness
