Ingrédients

  • 1 kg ripe tomatoes (or 2 cans whole peeled tomatoes)

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 2 tbsp olive oil

  • 1 tbsp butter

  • 2 cups vegetable broth

  • 1 tsp sugar (optional, balances acidity)

  • Salt and black pepper to taste

  • 1/2 cup heavy cream (optional, for creamy version)

  • Fresh basil leaves (optional, for garnish)

Instructions

  • Heat olive oil + butter in a pot over medium heat.
  • Add onion and cook until soft (4–5 minutes).
  • Add garlic and cook for ~30 seconds.
  • Add tomatoes
  • Fresh: chop and add to the pot
  • Canned: crush slightly and add with juices
  • Simmer
  • Add vegetable broth, salt, pepper, and sugar (if needed).
  • Simmer for 15–20 minutes to develop flavor.
  • Blend
  • Use an immersion blender (or regular blender) until smooth.
  • Optional: make it creamy
  • Stir in heavy cream and simmer 2–3 more minutes.
  • Serve
  • Taste and adjust seasoning.
  • Garnish with fresh basil and a drizzle of olive oil.
