Vous \u00eates au bon endroit ! 2) Non ? Vous \u00eates aussi au bon endroit ! Car quel que soit votre engouement pour les carottes, difficile de passer \u00e0 c\u00f4t\u00e9 ! Sur nos \u00e9tals toute l&rsquo;ann\u00e9e, riches d&rsquo;une foultitude de bonnes choses (vitamines, fibres, etc&#8230;) et se conservant (presque) \u00e0 perp\u00e9tuit\u00e9 dans nos r\u00e9frig\u00e9rateurs&#8230; Les carottes sont le couteau suisse des cuisiniers du quotidien. Le truc qu&rsquo;on a sous la main et qui fera forc\u00e9ment l&rsquo;affaire. Voire qui \u00e9pate, comme dans cette <strong>salade de carottes r\u00f4ties fa\u00e7on Ottolenghi<\/strong>. Facile de s\u00e9cher&#8230;  Heureusement notre sauveur \u00e0 tous, notre MacGyver en cuisine ne nous oublie pas. Derri\u00e8re ses fourneaux, avec son \u00e9quipe multiculturelle, il cr\u00e9e. Il s&rsquo;inspire des racines de chacun, repense, revisite, et sans renier ses origines propose une <strong>cuisine abordable, saine et gourmande<\/strong>. Comme par exemple dans cette recette d&rsquo;<a href=\"https:\/\/www.minutepapillote.com\/oignons-miso-facon-ottolenghi\/\">oignons au beurre de miso<\/a>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Et ici on s&rsquo;enthousiasme pour ces carottes accompagn\u00e9es d&rsquo;une sauce Chamoy, dont personnellement je ne connaissais pas du tout l&rsquo;existence. C&rsquo;est une sauce traditionnelle mexicaine sal\u00e9e &#8211; comme son nom ne l&rsquo;indique pas forc\u00e9ment (!) &#8211;   faite de fruits marin\u00e9s, et qui peut accompagner des l\u00e9gumes tout autant que des fruits. On en revient donc \u00e0 l&rsquo;id\u00e9e du couteau suisse. La sauce Chamoy allie des saveurs de sel\/sucre\/acide\/piment. Ici Ottolenghi utilise plut\u00f4t des abricots secs, du citron vert et du piment d&rsquo;Alep. Vous avez du piment d&rsquo;Alep, vous ? Moi, non &#8211; enfin, pas encore, parce que je compte bien en trouver&#8230; un jour (la qu\u00eate est longue et sem\u00e9e d&#8217;emb\u00fbches, croyez-moi). Mais pas de probl\u00e8me, en cuisine, il y a toujours une solution (vous remarquerez que l&rsquo;on revient tr\u00e8s subtilement \u00e0 MacGyver) !<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Les_carottes_roties_facon_Ottolenghi_on_sapproprie_le_plat\"><\/span>Les carottes r\u00f4ties fa\u00e7on Ottolenghi : on s&rsquo;approprie le plat <span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Oui, on s&rsquo;approprie le plat. Parce q&rsquo;on pr\u00e9f\u00e8re les carottes un peu plus r\u00f4ties, ou un peu moins. Parce qu&rsquo;on aime les sauces plus sucr\u00e9es, ou plus acides. On fait donc cuire plus ou moins longtemps, on ajoute plus d&rsquo;abricots secs \u00e0 la sauce, plus de citron vert&#8230; on fait comme on aime !<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Et comme je vous le disais, on n&rsquo;a pas forc\u00e9ment tous les ingr\u00e9dients non plus. La recette d&rsquo;origine pr\u00e9voit de l&rsquo;aneth et de la menthe \u00e0 disposer avant de servir. Quand je n&rsquo;en ai pas, je mets de la coriandre &#8211; notre herbe de coeur \u00e0 la maison. Je n&rsquo;ai pas non plus de piment d&rsquo;Alep ; j&rsquo;ajoute soit des flocons de pili pili, soit directement une huile (tr\u00e8s) piment\u00e9e. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Et avez-vous du sumac ? Cette \u00e9pice populaire au Moyen-Orient est parfois plus difficile \u00e0 trouver en Europe. Si vous n&rsquo;en avez pas, vous pouvez la remplacer par du zaatar (le sumac en est un composant). Ou bien par un m\u00e9lange maison de poivre et de zeste de citron. Ou encore plus facile, par un peu de vinaigre (de cidre par exemple) &#8211; c&rsquo;est l&rsquo;acidit\u00e9 que l&rsquo;on recherche avec cette \u00e9pice. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bref, on fait en fonction des ingr\u00e9dients du placard et de ce qu&rsquo;on a sous la main.
