demande que quelques ingr\u00e9dients, en g\u00e9n\u00e9ral tr\u00e8s <strong>faciles \u00e0 trouver<\/strong> (voire \u00e0 avoir dans ses placards) : <\/span><\/p><ul><li><span style=\"color: #000000;\">du<em> <span style=\"text-decoration: underline;\">sucre<\/span>, <\/em><\/span><\/li><li><span style=\"color: #000000;\">du <span style=\"text-decoration: underline;\"><em>citron<\/em><\/span> (jaune ou vert),<\/span><\/li><li><span style=\"color: #000000;\">de la <span style=\"text-decoration: underline;\"><em>levure de boulanger<\/em><\/span>. J&rsquo;utilise en g\u00e9n\u00e9ral de la s\u00e8che, car la levure fraiche est quasi introuvable \u00e0 Singapour. D&rsquo;ailleurs&#8230; <em>le saviez-vous ?<\/em> La levure de boulanger, qu&rsquo;elle soit fraiche ou s\u00e8che contient <strong>les m\u00eames souches<\/strong>, une combinaison de <em>Saccharomyces cerevisiae<\/em> (je vous mets au d\u00e9fi de retenir ce nom&#8230; personnellement, impossible pour moi \ud83d\ude09 ). Vous pouvez utiliser le produit que vous voulez\/avez, en r\u00e9duisant par 3 le poids de levure fraiche pour obtenir le poids de levure s\u00e8che. <em>Par exemple, si dans une recette, vous devez utiliser 21g de levure fraiche (1\/2 paquet en fait), il vous suffira de 7g de levure s\u00e8che<\/em> &#8211; <strong>facile, non<\/strong> ?<\/span><\/li><li><span style=\"color: #000000;\">et bien s\u00fbr&#8230; du <span style=\"text-decoration: underline;\"><em>gingembre<\/em><\/span>. Pour information, si vous avez le choix du type de gingembre, je recommande le \u00ab\u00a0<em>old ginger\u00a0\u00bb<\/em>, plus <strong>affirm\u00e9 en go\u00fbt<\/strong> que le \u00ab\u00a0<em>young ginger<\/em>\u00a0\u00bb &#8211; en tous cas, certainement pas du \u00ab\u00a0<em>blue ginger\u00a0\u00bb<\/em>, le galanga des recettes de curry tha\u00ef ! Et si vous n&rsquo;avez pas le choix ? et c&rsquo;est le <span style=\"text-decoration: underline;\"><em>sucre<\/em><\/span> qu&rsquo;elle pr\u00e9f\u00e8re ! C&rsquo;est la raison pour laquelle on ajoute du <span style=\"text-decoration: underline;\"><em>citron<\/em><\/span>. Quelques gouttes pourraient suffire (de mani\u00e8re empirique, je dirais une cuiller \u00e0 caf\u00e9), mais \u00eatre plus <strong>g\u00e9n\u00e9reux<\/strong> permet de donner ce petit go\u00fbt acidul\u00e9 si <strong>rafraichissant<\/strong>. Parce qu&rsquo;il est n\u00e9cessaire d&rsquo;avoir une bouteille <\/span><\/span><\/p><ul><li><span style=\"color: #000000;\"><span style=\"color: #000000;\">que l&rsquo;on ne remplit pas compl\u00e8tement, pour pouvoir laisser de la place au gaz cr\u00e9\u00e9 par la fermentation\u00a0<\/span><\/span><\/li><li><span style=\"color: #000000;\">qui puisse se fermer (la fermentation doit se faire en absence relative d&rsquo;oxyg\u00e8ne)<\/span><\/li><li><span style=\"color: #000000;\">et (attention, je vais peut-\u00eatre vous faire peur !) qui r\u00e9siste \u00e0 la pression des gaz &#8211; et qui, si jamais trop de gaz se sont accumul\u00e9s, puisse \u00ab\u00a0exploser\u00a0\u00bb sans blesser&#8230; Je vous ai bien fait peur \ud83d\ude09 ? Rassurez-vous, cela m&rsquo;est arriv\u00e9 &#8211; et \u00e0 part une bonne heure en cuisine \u00e0 tout nettoyer, rien de grave ne s&rsquo;est pass\u00e9. J&rsquo;avais en fait laiss\u00e9 la bouteille trop longtemps \u00e0 temp\u00e9rature ambiante (environ 14 \u00e0 15 heures \u00e0 34\u00b0), sans ouvrir le bouchon de temps en temps pour d\u00e9gazer. Les gaz se sont accumul\u00e9s, la pression \u00e0 l&rsquo;int\u00e9rieur de la bouteille a augment\u00e9&#8230; jusqu&rsquo;\u00e0 ce que la bouteille ne puisse plus r\u00e9sister. Cela a \u00e9t\u00e9 si p\u00e9nible \u00e0 nettoyer que je ne recommencerai plus, c&rsquo;est promis ! Et maintenant, j&rsquo;ajoute une pr\u00e9caution suppl\u00e9mentaire : je place la bouteille dans un grand sac en plastique. En fait, on arr\u00eate la fermentation lorsque la ginger beer est p\u00e9tillante &#8211; il suffit de go\u00fbter \ud83d\ude42<\/span><\/li><li><span style=\"color: #000000;\"><span style=\"text-decoration: underline;\">On arr\u00eate ensuite la fermentation<\/span> en filtrant puis pla\u00e7ant la ginger beer au r\u00e9frig\u00e9rateur &#8211; elle se conserve alors plusieurs
