<b>On fait revenir les \u00e9pices<\/b><\/i><span class=\"ez-toc-section-end\"><\/span><\/h3>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-4e878e5 elementor-widget elementor-widget-text-editor\" data-id=\"4e878e5\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><span style=\"color: #000000;\">La 1\u00e8re \u00e9tape est\u00a0<\/span><span style=\"color: #000000;\"><strong>primordiale<\/strong> :<span style=\"color: #ff6600;\"><strong> il faut faire revenir la p\u00e2te de curry dans un peu de mati\u00e8re grasse.<\/strong>\u00a0<span style=\"color: #000000;\">Ainsi chauff\u00e9es, <strong>les \u00e9pices de la p\u00e2te vont donner le meilleur d&rsquo;elles-m\u00eames<\/strong>, prendre du relief et perdre leur go\u00fbt \u00a0plut\u00f4t v\u00e9g\u00e9tal au profit de saveurs plus complexes : nuances de coriandre, cumin, etc&#8230;<\/span><\/span><\/span><\/p><p><span style=\"color: #000000;\">D\u00e9couvrez ici <span style=\"color: #ff6600;\"><u><strong>la p&rsquo;tite astuce de la cuisine traditionnelle tha\u00ef<\/strong> <\/u><\/span>(que l&rsquo;on retrouve dans le tr\u00e8s bon blog<\/span> <a href=\"https:\/\/hot-thai-kitchen.com\/about\/\">Hot Thai Kitchen<\/a><span style=\"color: #000000;\">) : on utilise le gras du lait de coco pour faire revenir les \u00e9pices et non une huile neutre ; ainsi on met un peu de lait de coco dans le fond de la casserole\u00a0<b>d\u00e8s le d\u00e9but<\/b>, sans ajout de mati\u00e8re grasse autre :<\/span><\/p><ol><li><span style=\"color: #000000;\">verser un peu de lait de coco dans votre casserole<\/span><\/li><li><span style=\"color: #000000;\">le faire \u00e9paissir sur feu moyen<\/span><\/li><li><span style=\"color: #000000;\"><span style=\"caret-color: #000000;\">ajouter la<\/span>\u00a0p\u00e2te de curry<\/span><\/li><li><span style=\"color: #000000;\">la faire fondre et revenir dans le lait de coco \u00e9paissi\u00a0<\/span><\/li><li><span style=\"color: #000000;\">au bout de 3 \u00e0 4 minutes (ou peut-\u00eatre un peu plus, en fonction du taux d&rsquo;humidit\u00e9 de la p\u00e2te de curry), lorsque des petites bulles d&rsquo;huile chaude apparaissent (en anglais il existe un mot pour cela : on parle de \u00ab\u00a0sizzling\u00a0\u00bb), on poursuit la cuisson (tout en remuant) quelques secondes &#8211; et l&rsquo;on est pr\u00eat \u00e0 passer \u00e0 l&rsquo;\u00e9tape suivante<\/span><\/li><\/ol><p><span style=\"color: #000000;\"><span style=\"text-decoration: underline;\"><strong>&#8230;Quels sont les avantages de cette p&rsquo;tite astuce ?<\/strong> <\/span>Il y en a 2 :<\/span><\/p><ol><li><span style=\"color: #000000;\"><strong>On n&rsquo;ajoute pas de mati\u00e8re grasse suppl\u00e9mentaire,<\/strong> on profite de celle d\u00e9j\u00e0 pr\u00e9sente dans le lait de coco<\/span><\/li><li><span style=\"color: #000000;\"><strong>On ne risque pas de faire br\u00fbler la p\u00e2te de curry<\/strong> &#8211; ce qui peut se produire en utilisant uniquement de l&rsquo;huile neutre ou de l&rsquo;huile de coco<\/span><\/li><\/ol>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-49f57e3 elementor-widget elementor-widget-heading\" data-id=\"49f57e3\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h3 class=\"elementor-heading-title elementor-size-default\"><span class=\"ez-toc-section\" id=\"2_-_On_ajoute_le_lait_de_coco_les_epices_complementaires_les_proteines_et_les_legumes\"><\/span>2 -
